West Coast Brandied Rice

Recipe from California Farmer, March 1997.

  • 1 cup firmly packed brown sugar
  • 1/2 cup butter or margarine
  • 2 apples, cored and chopped
  • 1 cup golden raisins
  • 1/2 cup brandy
  • 5 cups cooked brown rice (medium or long grain white rice may be substituted)
  • 1 cup chopped walnuts
  • 1 1/2 tsp ground cinnamon
  • 1 pint vanilla ice cream
  • Combine brown sugar and butter in large skillet. Cook over medium heat until sugar is dissolved. Stir in apples, raisins, and brandy. Cook until apples are crisp-tender, stirring constantly. Fold in rice, walnuts, and cinnamon. Serve topped with vanilla ice cream. Makes 8 servings.
